To make Oude Gueuze, one-, two- and three-year-old lambic is needed. As Eylenbosch restarted in 2019, lambic from Brewery De Troch was used for the Oude Gueuze, which was called ‘Prematuurke’. In 2022, three years later, Eylenbosch has three-year-old Oude Lambiek. Our first Oude Gueuze with 100% Eylenbosch lambic was bottled in May 2022 and officially launched on the 13th of October 2023. This Oude Gueuze rested for a year and a half in the bottle resulting in a sparkling, refreshing and complex beer.
